I haven't performed a speedtest on my Xbox 360 yet, but I have noticed that on my Sony Blu-ray player (Internet connected), I too get from 1-5 Mbps while streaming videos from multiple sources (YouTube, and Netflix just to name a few). The device is compatible with 802.11n, so that definitely isn't a limitation. I've re-configured the network settings, but there still doesn't seem to be any improvement.

What modem and router model do you have?
Some modems have internal built in routers that if an external router is connected, can cause speed and connection problems. Make sure that ISP cable or phone lines are in good working condition, filtered correctly or if on cable with tv, that tv line splitters are removed as they can cause signal loss at the modem.

Is QoS set up correctly on the external routers for XBL?

Netflix streams are roughly 3-3.5mbps for HD so the bandwidth you are seeing would be about right. YouTube isn't even worth using to compare speeds on since their content distribution network is so slow most of the day even on computers.
