It is the best way to start the series, ACII it will give you a refresh on the first one, about Altair and the Assassin order, and the rest of the games, brotherhood and revelations follow the story of the same character.
I like these games but I never understood how the future ties into the past. I was always confused about that. Are we going to get a Assassin Creeds 9 set in 2200?

What are you talking about? AC2 can be done in less than 40 man hours. Probably much less than that if I remember.
I've seen people go 500+ hours in Skyrim and never finish.

Saved game right before guard starts asking questions. When you want to reroll a char start with that save game, unfortunately, you still have to go through the beheadings. The game is great thereafter. Disclaimer, never played any AC games.
