I currently have a access to an overseas server I do not currently take full advantage of and am looking at starting up a privacy solution based service that offers email, VPN XMPP and SHH tunnel access. Initially I am looking at offering the service to a limited amount of people and hope to expand.
What I am running
1Gbit Unlimited connection Ubuntu Server 10.04 Prosody 0.9 for XMPP Citadel for Email configured for POP3 and IMAP OpenVPN for the VPN encrypted with 2048/256 encryption

Looks good. One thing you'll want to make sure you do is get the IPs on the server SWIPed to you. In doing so you can make the abuse email address your own email address so that you can handle abuse complaints quicker. Additionally, pursuant with RFC2142, make sure you have abuse@(your domain) set up.
Just my two cents on starting a proxy host, that line of business is very important to Internet user privacy, but because of that privacy it attracts less-than-legit users from time to time. If you're not able to handle the abuse complaints, your server could be disabled affecting your good customers.
Well The host I am with is good at turning the other cheek when it comes to what its users do and as for my plans the service I have in mind is a full anonymity service no logs and no intention to care what the the end user does as long as I get paid.
The Company motto I have planned is

To make sure nothing traces back to anyone code words will be used and if they want to pay by a service such as pay pal fake invoices for the sale of something like puppies or art will be used to mask to what the user is actually buying.
