I found that when I googled, but I didn't like it since it was risky. I was hoping there was some check box that I was overlooking.

Well, it isn't really any riskier than is was before you installed SP2. But it seemed that is what you wanted. It doesn't affect DEP it just doesn't check which zone the file came from Internet etc.

What exactly is zone checking? I only figured it was risky because I thought it would turn off the zones feature in IE. So there would be no Internet Zone or Trusted Sites Zones, etc. Maybe I'm wrong?

It means pretty much what is says. AES checks what zone the file you're executing came from. You are presented with the Open File - Security Warning when the files originated from the Internet zone. Setting the variable doesn't turn off zones just whether the file's origin is checked when it is executed. It is the "global" setting you were asking about.
