Depends on whether you want the vlan routed or not . If no then you do not have to have a default gateway address but they would not be able to talk outside thier own subnet .

It depends whether or not you're talking about Layer 2 or Layer 3.

Layer 2 switches can only have an IP address on one VLAN anyway, so you're limited to one IP Address per switch by that rule. But even then, it's not mandatory and won't affect routing in any way. (You'd use a trunk link or have a router in each VLAN on the appropriate subnet to deal with Inter-VLAN routing.)

Layer 3 is different. Because the switch does the routing too, then each VLAN should be addressed and the hosts on that VLAN have their gateway address set to that of the VLAN.
