All you have to do is right-click the gray area and click "Classic Menu" You can also "Add or Remove Commands..." there.

I don't know if that is something that only works in the beta but heres how I got it to work on the final version.

Where, on the IE 7.0 toolbar, do you find that option to select 'Classic' view?

To be precise, exactly where on the upper menu do you 'right click'?
