| Knowing Sony, it could be a standard SATA drive (it's supposed to be hot-swappable so I assume it's SATA not IDE), just with a proprietary connector, maybe even a firmware/software protection scheme to keep people from buying HDDs off the shelf and putting them in their PS3s...

That's what they did with the official PS2 Hard Drive. Basically, it used a very specific firmware which would allow it to be able to show up in the ps2's file browser and let you save data to/from it.
HDLoader didn't really care what hard drive you had, so long as there was one there.
