Many shredding services are bonded, and are liable for hefty penalties if found guilty of going through your shit.
Yeah, but I still think it is taking a big risk.. I bet it is safer to just take your chances by throwing it into a landfill somewhere than by sending it via the mail to one of these shredding locations.

You're half right---they do both.

I work for a healthcare company where medical records have to be retained for at least 7 years, and where other documents need to be shredded daily. Iron Mountain handles both for us.
