We've fallen in love with it too. It's so insanely easy to make, we keep wondering why we didn't make it before.

1. Crush strawberries until you get 2 cups worth.
2. Mix in 4 cups of sugar. Let sit for 10 minutes.
3. Mix box of pectin with 3/4 cup water and boil for 1 minute.
4. Pour pectin/water mix into berry/sugar mix. Stir.
5. Pour into jars and stick in freezer for 1 year or fridge for 3 weeks.

It took us under a half an hour to prep the ingredients, make the jam, and put everything away. Once Strawberry season is over, I'll need to find other freezer jams to make.

Update: We made some strawberry jam with much of the leftover strawberries.

Less than a pound left.

Or that should be there *was* less than a pound left. We went back today to pick some more with some friends of ours. My son was less into picking today and more into playing with his friend.

It was basically myself and my wife's friend out in the fields. We had trouble picking not because of a lack of berries, but because there were so MANY berries! Every time we would find a good spot, our eyes would spot tons of juicy red berries just two plants over. The berries were also bigger and sweeter this time.

The place was packed with people, yet everyone had room to spread out and everyone was leaving with armfuls of berries. We got 6 more pounds and our friends left with about 7.

I'm going to make more Strawnana bread tomorrow (the first two loaves are gone already) and might also make more jam.

I made the Strawnana Bread last night and it came out great.

My modified recipe:

4 eggs, lightly beaten
1/4 cup honey
1 1/4 cup packed brown sugar
1 cup strawberries, mashed
1/2 cup strawberries, chopped
1 cup mashed bananas
1 tsp vanilla
1/2 cup vegetable oil
1/2 cup apple sauce
3 cups flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt

1. Preheat oven to 350 degrees. Grease 2 9x15 inch pans.
2. In a medium bowl, combine the flour, baking soda, cinnamon and salt.
3. In a large bowl, combine remaining ingredients. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture and stir just until moistened.
4. Pour pans and bake for 1 hour or until loaves are done.

I know what you mean about the freezer! Mine's a scary place sometimes!

That recipe sounds tasty and nourishing and, important for me-would lend itself to being made with gluten-free flour.

Good luck and I hope this becomes a fun family tradition for you as it has for my family.

I think this is what we're going to do with some of them. Unfortunately, I don't know if I have enough room in my freezer for the cookie sheet. (It's pretty packed right now.)

Fun to look at these pics - my sister and her daughter picked some yesterday, so I got to eat some myself after these pictures made my mouth water!

We like strawberry freezer jam:
STRAWBERRY JAM (FREEZER METHOD)

1 qt. or 2 pt. fresh strawberries
4 c. sugar
1 box Sure-Gel fruit pectin
3/4 c. water
Wash strawberries and remove stems, thinly slice (use a large bowl); sprinkle
sugar over strawberries and set aside for 10 minutes, stirring occasionally.Mix water and Sure-Gel in saucepan. Bring to boil over high heat, stirring
constantly. Continue boiling and stirring for 1 minute. Stir Sure-Gel
mixture into strawberries. Stir constantly for 3 minutes. Fill jars within
1/2 inch of top of jar. Wipe off top edges of jar. Quickly cover; let
stand at room temperature 24 hours. Then place in freezer. Refrigerate
after opening.

The recipe is in packages of Sure-Gel. Tastes more like fresh fruit than cooked jam - just not quite as thick. Makes a great snack on bread and butter (provided you can eat bread.)

Easy way to freeze some is to rinse them, let them dry then put on cookie sheet in freezer. After frozen, remove to zip lock bags. Mom says I don't need to rinse them first if I remember to rinse them when I thaw them, but I like the idea of rinsing first.

I know what I would do with fresh strawberries. Strawberry Romaine Salad. I remember the first time I ate it. It is a divine salad and perfect compliment to a summer barbecue.

I have my own recipe, but the this one from allrecipes.com is a close facsimile. I use less sugar and omit the poppy seeds, though.

I can't imagine what to do with that many pounds of strawberries. Nor can I imagine going picking with 2 small boys, one with binky still in mouth. Love your afternoon and thanks for sharing. It was delightful.

Strawberries actually freeze great - as long as you serve them slightly frozen, they retain their shape and flavor from the freezer.

My favorite thing to use fresh strawberries in is strawberry shortcake (slightly mashed strawberries sweetened with sugar if necessary and then you crumble in freshly baked pie crust).

- shakes and smoothies
- slightly mashed and sweetened, if necessary, served with angel food cake and whipped cream
- same as above, but with pound cake
- homemade strawberry preserves
- parfait (layers of pudding, strawberries, and whipped cream)
- sliced and served with ice cream

I love strawberries, if you couldn't tell... lol

We went out Strawberry picking today. It was Noah's, Jacob's, and even my wife's first time. We wound up with 6 1/2 POUNDS of strawberries, so we're going to need to find something to do with them. (Any suggestions?) Here are some photos of our day out (my wife took most of the photos as I spent much of the time collecting strawberries with my boys):
