My guess is that the start-up disk is for the modem. The ethernet part (for DSL, cable modems, etc.) is easy, just give it the parameters you got from your ISP (if it's DHCP, you may not have to do anything at all).

My question is... does the software support PPPoE?

It probably will, but even if it does not, you could just by a router that does. You will probably want a router anyway so you can use both your computer and ps2 online at the same time and not have to worry about moving wires around.
