I do this for lan parties all the time, in fact yesterday I just moved my cable modem to a friends house for a Thanksgiving lan 
When you hook everything up, make sure to check signal levels (»192.168.100.1, -15dB downstream min, 55dB upstream max) -> and remember splitters add extra loss. Just note when moving a cable modem it might take a bit longer than normal to sync up.
The reality is, normally you don't actually *need* extra modems for a lanparty. Most games use very little upload. For first person shooters 4-6 people is about the max you can get on 128kbps upload. If you play RTS or MMORPGs they use even less bandwidth. One nice advantage of having a second modem however is to force anyone who wants to run P2P apps on the extra modem, because that *will* affect pings. -- Want an OC3? Go to college!
