On my GE appliances, "Monogram" series, the sabbath mode is an add-on you need to buy and they are $200+ each.

An explanation about the sabbath mode, when keeping the sabbath the key is not to "turn on" any appliances. Sabbath mode in a fridge will keep the compressor running on a schedule rather than linked to the thermostat, the light won't turn on, etc... this allows sabbath observant folks to use these appliances without breaking the sabbath. Kind of like using a light timer set ahead of time rather than just keeping the light on.

It says even unplugging the oven will not cancel Sabbath mode. Either you have to press and hold the Clock button for 5 or more seconds, or wait 72 hours until Sabbath mode turns itself off.
