So... I giuess the question now is, in removing the XML functionality, will this bork the apps in MS Office 2007? Is it applicable to sold software? I own both the 2003 and 2007 so I guess I'll have to watch for "Office updates" very soon!

No, it's not removing XML, it's something that nobody uses known as "Custom XML".

There is already a patch to disable this in the works.

Edit - Ok, it's not *literally* nobody, but this won't affect the vast majority of users.
