Your fastest option out of the gate for a server would be (for me) CentOS with the option at install time to create a FreeNX host. You could also skip FreeNX and CentOS and install another distro (Debian for example) and put the nomachines or FreeNX packages on later.

As for first time client distributions, that's a tough decision. Ubuntu/Fedora/openSUSE are what I suggest, but there's no "beginners" distro, it is mostly trying things out and finding your personal favorite.
