When you started talking about "old" phones, I thought you were talking about rotary (pulse) dial.
And indeed the "500" from Western Electric (design also licensed by others) is a rotary phone.
But the [2500] is a full Touch-Tone (DTMF) phone. It even has the [*] and [#] keys which were missing in the earlier Touch-Tone phone, the [1500].
Because it has touchtone dialing, I can't see why it wouldn't work with any ATA. Your ATA would need to be set for the G.711 (PCMU) codec, your provider would need that as well.
Your main potential issue would be REN, it seems to me. But the [2500] phone should have a REN of 1.0 according to my reading.
