I save every major step of my editing because PS7 only records the last 20 steps in its history, and in case I make a mistake since I'm still in the learning phase.

No that is only PS7's DEFAULT history setting, you can make it anything you want depending on how much memory and resources you want to devote to Photoshop. (I have mine set to 30)

Check in the Edit/preferences settings... note that the dialog box is multiple pages, and that setting is a few in.

yea, make sure to change your default history setting. I could never work with only 20 steps, sometimes, I probably go back more than 60 (im sure im doing something wrong, but when I'm working in on a highly magnified image, i make very small changes, and lots of them to fill up a space... if this looks bad, I need to undo them all). My history setting is currently either at 100 or 200, im not sure. I'd rather be safe then sorry.

as far as editing, I havent worked on a large project for anyone here yet, so I have simply deleted them thus far. If its something that I spend a lot of time on, I will save it of course, probably in its own folder with name and date.
