If it were me, I'd stick the Xbox in the DMZ since it doesn't really need that much protection from the outside world... and just set the port forwarded to your PC under the virtual servers section. I THINK this will solve the issue, but give it a try and see.

My XBOX is in DMZ mode but once this routers upnp takes the port it no longer gives it up unless I restart my router.
